Once you get your head around Fuertes bullshit you'll rapetrain me with seth i reckon. Fuerte is rushdown fodder.  Just get in there and put the smash on him. Until he gets ultra, there is absolute fuck all he can do about it except EX run away and hope to god he flukes a knockdown. This is advice i give everyone, and once people start taking it it makes games with Fuerte a lot harder for me. Play against Fuerte the opposite of how you would play against every other character in SF4. Yes, you CAN beat fuerte with really strong defensive footsies, but rushing him down is basically a free ride.

Careful of back and neutral jumps too. It didnt happen much in our games, but i know seth likes to use his j.hp. This move is EX guac bait. EX guac is 200 damage. Which is just under 30% of Seths lifebar. You dont want to get hit by EX guac. Jab pressure and Tanden Engine pressure is really useful in this match. Much like general rushdown, theres nothing Fuerte can do about it until he gets ultra. (And that didnt even work, even when i was lolspinning the stick and mashing buttons. XD)
